We all know that soy is healthy because it is a complete protein that contains amino acids and fiber. I love edamame as a snack food. You can buy it in a bag in the freezer department at Wal-Mart. I put some in a bowl and microwave it for 2 minutes and sprinkle a little bit of sea salt on it. One day I had fixed a bowl for a snack and Riley wanted to taste it. He loves it and will ask me to fix him some beans for a snack. Beside being flavorful, I think he enjoys taking the beans out of the pod.

What a great idea! I know I am on the prowl for healthy recipes, ideas, etc--I will probably do more "stealing" than "giving" for a while until I get better at this=) Those tacos sound yummy!
