I saw your comment on my blog asking what a jello cake is. It's very yummy and easy to make. Bake one white cake per box instructions. I substitute apple sauce for oil and only use egg whites to reduce fat and cholesterol. Let cake cool. Once cool, poke holes every inch or so all over the cake. Mix 2 packages any flavor jello mix with 2 cups hot water. I use sugar-free jello mix. Pour over cake. Top with cool whip. I use two bowls of the fat-free variety. Place in refrigerator to cool.
My mom has made these for as long as I can remember. She usually uses cherry or strawberry jello. Sam had lime this time around. I think lemon would be very good, too.
